Hey everyone! And gooood morning! 🌞 We have another recipe from Radhi Devlukia’s cookbook, JoyFull, to share with you all – her French Toast Casserole. This dish hits everything you’re looking for in a sweet, decadent breakfast. Bonus points: it is insanely simple to recreate when you’re in a rush and it makes enough for leftovers! 😋
Casserole
Unsalted butter
2 ½ C unsweetened almond/oat milk
3 TB maple syrup
2 TB cornstarch or flour
2 TB flaxmeal
½ tsp vanilla
1 14 oz loaf of bread, cut into 1” cubes
Pecan topping
½ C chopped pecans
¼ C almond or regular flour
¼ C sugar
1 TB maple syrup
1 tsp cinnamon
Sweet cashew cream
1 C cashews
⅔ C unsweetened almond milk
2 tsp maple syrup
1 tsp vanilla
1 tsp lime juice
For serving
Mixed berries
Maple syrup
