Sheet pan meals are such an easy, versatile way to make dinner. Just throw some veggies and maybe a protein on a sheet pan and bake.
Sheet Pan Mini Meatloaf
1 lb. Ground Beef or Hamburger
1 Egg
1 Sleeve Saltine Crackers, crushed
1 - 1 1/2 tsp. Mrs. Dash Seasoning (optional)
3 String Cheeses, cut in half
In a mixing bowl, mash up the ground meat. Add the egg, crushed crackers, and the seasoning, if using. Mix with your hands until it is well blended. Divide the meat into 6 pieces and flatten. Place 1/2 of a string cheese in the center. Gather the meat together or roll it up, if you can. You want to hide the cheese, seal the edges as best as you can. Place on an ungreased baking sheet. Continue until you have made 6 mini meatloaves.
Add chopped vegetables or frozen vegetables to the pan.
Bake 400℉ 35 -40 minutes
Baking times for various vegetables:
Diced potatoes - 50 - 55 minutes
Cut up carrots - 50 - 60 minutes
Frozen Broccoli - 40 minutes
Use what you like, checking often for doneness.
Sausage and Veggie Sheet Pan Dinner
1 (7 oz) pkg. Smoked Sausage, sliced
1 - 2 Bell Peppers, any variety, chopped
1/2 - 1 Whole Onion, diced
2 C. Frozen Broccoli
2 Tbsp. Olive Oil
1 tsp. Garlic Powder
1 tsp. Italian Seasoning
Salt and Pepper to taste
Chop up the vegetables and place on a large baking sheet. Drizzle oil on top. Sprinkle garlic powder, Italian seasoning, salt, and pepper. Stir to coat. Bake 400℉ 30 - 35 minutes.
Serve as is or over rice.
Add any vegetables that you like and any type of sausage that you like. 1 (7 oz) pkg. of smoked sausage feeds 3 - 4 people. If you are serving more people, add more sausage.
Potato Nachos
2 - 3 Potatoes, thinly sliced
Olive Oil
Salt and Pepper to taste
1 - 2 C. Taco Meat
1 - 2 C. Cheddar Cheese, shredded
Additional toppings (optional):
Diced Tomatoes
Chopped Onion
Sliced Black Olives
Sour Cream
Salsa
Spread the potato slices onto a large, greased baking sheet. You can overlap the slices, but do not stack them, as this will take longer to cook. Brush the oil over the top of the slices. Sprinkle with salt and pepper. Bake 400℉ 20 minutes. Using a turner/spatula loosen the potatoes slightly. Sprinkle the taco meat and cheese over the top of the potato slices. Bake again for 5 minutes, or until the cheese melts. Top with your favorite taco toppings. Serve.
**Honestly, I prefer these with just tomatoes and sour cream as additional toppings.
