This process took under 30 minutes to prep my veggies for the freezer. The only thing I will have to do this week to prepare for my recipes will be to cut up potatoes. Those don't keep as well in the fridge or freezer unless you do some extra steps. Consider preparing your veggies in advance to save time on a day when you have that extra couple minutes. It will pay in dividends in the future. Cooking doesn't have to be a whole ordeal. You can do simple steps like I'm doing now to make preparing a delicious meal a pleasure. As my favorite Youtuber would say, "your future self will thank you."
