Growing up Italian this is one of the best meals, a little time consuming but well worth every minute. The video will show in detail how I do it along with tips on why I do things. I've been making this for years after watching my mom and grandmother, both full blooded Italian. Grab a glass of wine, sit back and enjoy this video!
Below I will post all the ingredients for the amount in my video and then I will break the video down for a smaller version.
Sauce and meatballs
For the sauce, video version
Ingredients:
3 90oz cans of DOP whole peeled tomatoes
3/4 cups of olive oil
1 large onion chopped
8 to 10 cloves of garlic chopped
1 Tbsp of oregano (dried/Mccormick)
1 cup of pecorino Romano
1 cup of parmesan cheese (freshly grated)
4 to 6 basil leaves (fresh)
2 to 3 bay leaves
45 oz of water/ 1/2 of a can
1/2 tsp of salt, then adjust to taste near the end
1/2 tsp of pepper, then adjust to taste near the end
1/4 tsp of red pepper flakes
For the sauce, 1/3 version (small batch)
Ingredients:
45oz can of DOP whole peeled tomatoes
1/4 cup of olive oil
1 small onion chopped
4 to 5 cloves of garlic chopped
1/4 to 1/2 Tbsp of oregano
1/3 cup of pecorino Romano cheese
1/3 cup of parmesan cheese
1 to 3 basil leaves (fresh)
1 to 2 bay leaves
15oz of water
1/4 tsp of salt, then adjust to taste near the end
1/8 tsp of pepper, then adjust to taste near the end
A pinch of red pepper flake
For the meatballs, video version:
This version makes 50 meatballs at 2.5oz
Ingredients:
4 lbs of ground beef 80/20
1/2 cup of parsley
5 cloves of garlic minced
4 large eggs
12oz of stale Italian bread
1 1/2 cups of parmesan cheese (freshly grated)
1/4 tsp of salt
1/4 tsp of pepper
For the meatballs, 1/2 version:
This version makes 25 meatballs at 2.5oz
Ingredients:
2 lbs of ground beef 80/20
1/4 cup of parsley
2 to 3 cloves of garlic minced
2 large eggs
6oz of stale Italian bread
3/4 cups of parmesan cheese (freshly grated)
pinch of salt
pinch of pepper
