Rib Tips were removed from two racks of Spare Ribs that I bought from my local store. Rib Tips were seasoned with 16 Mesh Black Pepper and Lawry's Seasoned Salt and a previous rub that I had made for the last brisket on my channel. Rib Tips sat out at room temperature so that I could start a fire on my Old Country Wrangler. Fire was started using Kingsford Blue Bag Charcoal, Oak and Hickory splits. Rib Tips were spritzed every thirty minutes when I determined that the rub was sat. These Rib Tips smoked for 4 hours and due to high winds, I removed the Rib Tips and placed them in my oven at 250 degrees for a bit over an hour. I probed them with my thermometer and they read 200. Carry over took them to 205 degrees. These rib tips came out very tender.
