Full written recipe - Cheesy Omelette Butter Masala
Prep time: 15-20 minutes

Serves: 5-6 people
Ingredients:
Puree
TOMATO | टमाटर 4 MEDIUM SIZED. (ROUGHLY CHOPPED)
CORIANDER STEMS | धनिया के डंठल A HANDFUL
CASHEW | काजू 15 NOS. (BOILED)
Onion mixture
ONION | प्याज़ 3 MEDIUM SIZED. (ROUGHLY SLICED)
GARLIC | लहसुन 12 CLOVES
GINGER | अदरक 2 INCH
GREEN CHILLI | हरी मिर्च 2 NOS.
Gravy
OIL | तेल 2-3 TBSP
CUMIN SEEDS | जीरा A PINCH
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1 TBSP
TURMERIC POWDER | हल्दी पाउडर 1/4 TSP
GARAM MASALA | गरम मसाला 1/4 TSP
CORIANDER POWDER | धनिया पाउडर 1 TSP
HOT WATER | गरम पानी A SPLASH
SALT | नमक TO TASTE
SUGAR | शक्कर A PINCH
HOT WATER | garam पानी AS REQUIRED
BUTTER | मक्खन 2 TBSP
FRESH CREAM | फ्रेश क्रीम 2 TBSP
ROASTED KASURI METHI POWDER | भुनी कसूरी मेथी पावडर A PINCH
GARAM MASALA | गरम मसाला A PINCH
FRESH CORIANDER A HANDFUL (CHOPPED)
SALT | नमक IF REQUIRED
Omelette
EGGS | अंडे 2 NOS. (For 1 portion) Or AS REQUIRED
SALT | नमक TO TASTE
BLACK PEPPER | काली मिर्च A PINCH (FRESHLY CRUSHED)
KASHMIRI RED CHILLI POWDER | कश्मीरी लाल मिर्च पाउडर 1/4 TSP
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
ONION | प्याज़ AS REQUIRED (CHOPPED)
GREEN CHILLI | हरी मिर्च 1 NO. (CHOPPED)
BUTTER | मक्खन 1 TBSP
OIL | तेल 1 TSP
Method:
Add all the ingretof the puree into a mixer jar & grind it into a fine puree.
Add onion, garlic, ginger & green chilli into a chopper & chop them finely.
Set a kadhai over high heat, let it get hot then add oil & let the oil heat up as well.
Once the oil gets hot, add the cumin seeds & let them crackle.
Next, add the chopped onion mixture, stir well & cook over medium high flame until the onions turn light golden brown.
Once the onions turn light golden brown, lower the flame & add all the powdered spices along with a splash of hot water, stir & cook over high flame until the oil separates.
Add the prepared tomato puree along with salt & sugar, stir well & cook over high flame until the the gravy starts to leave the pan on itself, try using as little water as possible.
Once the puree is cooked, add hot water to adjust the consistency, it should be seni-thick.
Then add the butter, cream, kasuri methi, garam masala & fresh coriander, stir well & taste to adjust salt, the gravy is ready.
Now this gravy can be served with total 6 eggs, I like to make omelettes of 2 eggs & serve it in 3 different portions, you can adjust or make according to your preference.
Crack the eggs in a bowl add all the ingredients & whisk well.
Add butter & oil into a hot pan, let it get hot then pour the eggs & make an omelette.
Cook & loads of grated processed cheese & fold the omelette as per your preference.
To serve, place the omelette onto a plate & pour the hot gravy on top.
Your delicious, omelette butter masala is ready.
