Creamy, decadent and delicious chicken fettuccine alfredo. This is not a dish for those of you on a diet. But if it’s your time to splurge, this what you should be making for din’! Butter, cream, loads of garlic, what's not to love?! I love cooking chicken with fettuccine alfredo. Browning the chicken in the pan before making the alfredo sauce adds so much added flavor to the sauce! Top with some fresh basil and you have a masterpiece on your hands.

| Ingredients |
2-3 Chicken Breasts, Pounded Thin
½ Pound Fettuccine Pasta
1/3 Cup Butter
1 Cup Heavy Cream
1 Cup Freshly Grated Parmesan
2 Cloves Garlic, Minced
2 Tablespoons Italian Seasoning
1 Small Pinch of Nutmeg
Salt and Pepper to Taste
| Instructions |
Bring a large pot of salted water to a boil and cook the fettuccine noodles according to package instructions.
After pounding, season both sides of the chicken breasts with Italian seasoning, salt and pepper.
In a large sauce pan, melt butter and add the chicken breasts.
Brown the chicken on both sides and allow to cook until fully done. (160 degrees) Remove from the pan and set aside to rest.
In the same pan, with the remaining chicken drippings, add the remaining butter and allow to melt. Add garlic and sauté for about 2 minutes or until fragrant. Add the cream. Using a flat wooden spatula scrap the chicken drippings from the bottom of the pan and stir. Allow cream to come to a simmer.
Add the grated Parmesan and simmer 3-5 minutes or until the sauce has reduced slightly.
Cut the chicken breasts into 1 inch slices.
Add the drained cooked pasta and chicken to the Alfredo sauce and mix.
Serve immediately with freshly chopped parsley or basil on top.
