CRISPY BLACK CHANA MASALA VADAI
South Indian Snack | High Protein | Vegan
Ingredients:
2 cups black chana (soaked overnight)
2 large onions, finely chopped
Salt to taste
A few curry leaves, finely chopped
2 green chillies, chopped
6 garlic cloves, crushed
1 tsp fennel seeds
2 tbsp rice flour
Oil (for deep frying or brushing while baking/air frying)
Instructions:
1. Grind Chana:
Drain the soaked black chana and grind it into a coarse mixture without adding water.
2. Mix Dough:
Transfer the ground chana into a bowl. Add chopped onions, green chillies, curry leaves, crushed garlic, fennel seeds, rice flour, and salt.
Mix everything well to form a tight dough. Do not add water to bind.
3. Shape the Vadai:
Take small portions and shape into flat discs.
Cooking methods:
🔥 Deep Frying Method:
1. Heat oil in a pan.
2. Drop vadai gently one by one into hot oil.
3. Don’t overcrowd the pan.
4. Fry on medium heat until golden brown and crispy on both sides.
5. Drain on a paper towel. Serve hot.
🔥 Baking / Air Frying Method:
1. Preheat oven/air fryer to 200°C (392°F).
2. Place the vadai on a tray, brush or spray some oil on both sides.
3. Bake for 14 minutes, flipping halfway and brushing with oil again.
4. Serve warm.
