Spiced to perfection —this chicken biryani is perfect to serve for Ramadan! #CookwithMagic
Ingredients:
2 cups basmati rice
1/4 cup vegetable oil
1 stick cinnamon
2 pcs bay leaf
2 pcs star anise
1 tsp cardamom pods
2 strands mace
2 pcs dried chili
1 tsp coriander seeds
2 tbsp biryani masala
10 sprigs coriander leaves, chopped
10 sprigs mint leaves, chopped
1/2 tsp freshly ground pepper
1/4 tsp ground cloves
2 pcs red chili, minced
1 pc green finger chili, minced
4 cloves garlic, minced
2 thumb-size ginger, minced
2 pcs onion, chopped
3 pcs tomato chopped
1/2 kg chicken leg and wings
2 sachets 8g MAGGI® Magic Sarap®
1 tbsp turmeric powder
2 cups water
1 pack 125ml NESTLÉ All Purpose Cream
1 tbsp vinegar
Procedure:
1. Rinse basmati rice twice. Soak in water and set aside while preparing the rest of the ingredients.
2. Sauté cinnamon, bay leaves, star anise, cardamom, mace, dried chili, coriander seeds in a pot with oil for 1 min. Add biryani masala and turmeric powder then sauté for another minute.
3. Mix half of coriander and half of mint leaves with pepper, cloves, red chili, finger chili, garlic and ginger. Add to the pot with the spices and cook for 1 min. Add onion and tomato and cook for another 2mins.
4. Season chicken with 1/2 sachet of MAGGI® Magic Sarap® and add in the pot to cook for 5 mins.
5. Pour water. Combine NESTLÉ All Purpose Cream and vinegar. Stir in the pot and simmer.
6. Drain basmati rice and add to the pot. Season with the remaining 1 1/2 sachets of MAGGI Magic Sarap®. Gently stir, cover and cook over low heat for 30 mins. Turn off heat and set aside for 15 mins.
7. Fluff rice and transfer into a serving plate. Top with remaining coriander and mint leaves. Serve warm.
