This is my favourite pulse. We Parsees call it Titori and the Gujaratis call it Val ni dal or Val nu shaak.
Ingredients
350 gms sprouted Val dal
1 large or 2 medium onions chopped
1 lagre tomato
1 tea spoon ginger garlic paste
2 green chillies finely chopped
1 tea spoon cumin powder
1 tea spoon coriander powder
2 tea spoons kashmiri chilli powder
1/2 tea spoon turmeric powder
1 tea spoon salt
3 table spoons desiccated coconut
1/2 tea spoon garam masala powder
4 table spoons coriander leaves chopped
4 table spoons oil
Method
Place a pan on medium heat and add oil
Add chopped onion and fry for 3 to 4 minutes until translucent
Add ginger garlic paste and fry for a minute
Add chopped green chillies and fry for 30 seconds
Add the chopped tomato and stir fry for another 30 seconds
Add cumin powder, coriander powder, turmeric powder, kashmiri chilli powder, salt and stir fry everything for 2 to 3 minutes
Add desiccated coconut and stir fry for a minute
Add the sprouted Val dal and stir fry for 2 minutes
Add 2 table spoons chopped fresh coriander and stir it in
Add 2 cups water and bring to a boil
Cover and cook on medium heat for 5 minutes
Open and give it a stir and cover and cook again for another 5 minutes
Open and check if the Val has cooked
This is done by taking a piece of the val dal and smashing it between your finger. If it smashes easily them the dal is cooked
Stir gently and simmer to a thick consistency
Add 1/2 tea spoon garam masala powder and 2 table spoon fresh chopped coriander and gently stir it in
Remove from heat
