The Rocca dei Trinci is a 13th Century tower near Foligno in Umbria with 5 bedrooms that can be rented either individually or as a whole for events, weddings etc.

Chef Celine is a cordon bleu trained private chef, available for private bookings, weddings and events. She is based in Tuscany.

We visited the Cascate Menotre near the village of Pale

Orecchiette con funghi porcini e pomodori secchi:
Spring onions
sundried tomtoes
cherry tomatoes
porcini mushrooms
parsley, chilli flakes (optional)
orecchiette pasta 100g pp

Soak the mushrooms in a bowl of water to rehydrate
Sautè the spring onions
Add the mushrooms and part of the water they were soaking in.
After a few minutes add the tomatoes and cherry tomatoes. Add chilli if using. Keep adding the mushroom water to keep it moist. Leave to cook, keeping an eye on it.
Cook the pasta separately.
Mix all together when the pasta is cooked and add the parsley as a garnish
