ACORN SQUASH KALE SALAD
Ingredients:
1 Acorn squash
Black Lacinato Tuscan Kale - 1 bunch
roasted pumpkin seeds
1/2 tsp salt
1 tbsp Oil
Balsamic Dressing:
2 tbsp Olive oil
2 tbsp Balsamic vinegar
1/2 tbsp Dijon mustard
1/2 tbsp Agave
Pinch of salt
1. Preheat the oven to 350
2. Cut the acorn squash in half from top to bottom. Remove the seeds and core with a spoon.
3. Place the flat side down and cut the acorn length wise in sliced, creating half-moon cuts.
4. Place the squash flat on a baking sheet and drizzle salt and olive oil. Bake for 25 minutes.
5. Meanwhile, wash the kale and cut out the stems. Cut into 1-inch sized pieces and set aside.
6. In a bowl, add the balsamic vinegar, Dijon mustard, and agave. Whisk together then slowly add the oil to emulsify. Add a pinch of salt and add more as needed.
7. Once squash is cooled, assemble the salad on a platter. Starting with the kale, squash, then pumpkin seeds.
8. Drizzle with the dressing and season with salt and pepper to taste.
