Kefir is a probiotic food that is nutritious and tasty. Although it is looks and tastes similar to yogurt it contains much more beneficial microbes than yogurt. To prepare kefir, you need to get kefir started grains. It can be purchased online from different sources. Kefir grains comes in kefir or milk. You need to strain the kefir grains and discard the original kefir liquid or yogurt in which it was kept. Rinse the kefir grains with fresh (boiled) milk. Put the grains in a clean glass container and add sufficient amounts of milk to it. It is better to use fresh mil rather than pasteurised milk. Keep the milk containing kefir grains for fermenting. It may take one to two days for the fermentation process depending on the weather/temperature of your region.
You can now strain the grains and re-use it to prepare the next batch.
Kefir has lots of health benefits. It can be used in breakfast smoothies, sauces, curries or can be consumed as it is. Best not to heat kefir as heating may destroy the beneficial microbes.
