Have you ever made apple pie that was soggy? Apples during baking releases a lot of liquid that gets absorbed by the crust making it soggy, especially if you didn't add enough flour to thicken all those apple juices. In this video, the apples was cooked before baking, making sure that the pie crust doesn't become soggy afterwards.
This video recipe also uses a pie crust that doesn't need to be rolled. Back in my college days when I still don't own a rolling pin, I would make pie crust that you only need to press to the pie plate. It is easy and less fuss making pie crusts.
