Crispy Potato Suji Nuggets
Ingredients
• Boiled potatoes 4, medium sized
• Oil 2-3 tbsp
• Semolina (suji) ½ cup
• Water 1 cup or more
• Salt to taste
• White pepper powder to taste (or black pepper powder)
• Onion powder 1 tsp
• Garlic powder 1 tsp
• Oregano 1 tsp
• Plain flour for shaping the nuggets
• Oil for deep frying
Preparation
• Mash boiled potatoes. Add oregano and mix. Keep aside.
• In a cooking pot add 2-3 tbsp oil and semolina. Toast on low flame until it is cooked and aromatic.
• Add water, salt, white pepper powder, onion powder and garlic powder and cook on low until the semolina does not feel grainy anymore and forms the texture of a dough.
• Take it off the flame on to a plate when the dough becomes non-sticky and leaves the pan.
• Allow to cool the dough at room temperature and add to the mashed potatoes.
• Mix well and shape into sticks and nuggets using plain flour for dusting.
• Heat oil on a medium flame and fry the nuggets until golden brown.
• Take out and serve immediately. Enjoy!
