Jalapeño Popper Stuffed Bagels Recipe


Ingredients (makes 2 stuffed bagels):

2 Asiago Cheddar bagels

4 oz cream cheese, softened

1 1/2 fresh jalapeño, diced (plus thin slices for topping)

2 green onions, diced

½ teaspoon smoked paprika

1 Tbsp ranch seasoning

¼ cup shredded mozzarella cheese

3 slices bacon, cooked and crumbled

3 oz breakfast sausage, cooked and crumbled

2 eggs

4 tablespoons shredded cheddar cheese

Salt and pepper, to taste

Oil, butter or ‪@Country-Crock‬ Drizzle and Sizzle for the griddle


Instructions:

1. Cook bacon and sausage on the Blackstone until done, then crumble or chop bacon.

2. Slice a thin layer off the top of each bagel. Cut around the inside and press the center down to make a space for stuffing.

3. In a bowl, mix cream cheese, diced jalapeño, green onion, paprika, ranch seasoning, mozzarella, bacon, and sausage. Season with salt and pepper.

4. Lightly toast bagel tops and bottoms on the griddle.

5. Fill each bagel with the jalapeño popper mixture.

6. Cook over-easy eggs. On another spot on the griddle, place shredded cheddar and sliced jalapeños, let them melt and get crispy, then flip onto the eggs so the cheese and jalapeños become the topping.

7. Place the cheesy jalapeño egg on top of each stuffed bagel and serve hot.
