High-Protein Mango Cheesecake Chia Pudding
Serves 1 Prep 5 mins (+ overnight chilling time)
½ cup (100g) Coles Cottage Cheese
1 mango, stoned, peeled, chopped
½ cup (125ml) Coles Coconut Milk Unsweetened
1 tbs Coles PerForm Vanilla Flavour Whey Protein
¼ cup (35g) Coles Overnight Chia Pudding Mango & Coconut
¼ cup (70g) plain coconut or Greek-style yoghurt
2 tsp Coles Desiccated Coconut
1. Place the cottage cheese, half the mango, the coconut milk and protein powder in a blender and blend until smooth. Place remaining mango in an airtight container and reserve in the fridge until needed.
2. Transfer cottage cheese mixture to a 2-cup (500ml) jar and stir in the chia pudding mix. Cover and place in the fridge overnight to thicken.
3. Top pudding with yoghurt and reserved mango. Sprinkle with coconut to serve.
