In this video we go behind the (very scenic!) scenes of Prom Country Cheese in Gippsland, Victoria, Australia -- a farmhouse sheep dairy and cheesery run by Burke and Bronwyn Brandon. A natural born farmer, and third generation cheese-maker, Burke makes a range of award-winning cheese with milk from his own flock, including: a brie-style, a washed rind, fresh varieties; and some more mature styles, similar to pecorino. Here, Burke shares his philosophy on cheese-making and farming, and takes us through a tasting of some of his most popular cheeses.
