Mascarpone is a soft Italian acid-set cream cheese and as you all know one of the main ingredients in the famous Italian dessert Tiramisu. It is sometimes very hard to find Mascarpone cheese in the store & a bit pricey too , so why not make it at home. It's very easy to make with just 2 ingredients, heavy cream & lemon juice & the good thing is it's preservative free..
Mascarpone cheese has got a very soft & velvety structure. The only difference between Mascarpone cheese & Cream cheese is that , the latter is made using whole milk & heavy cream whereas Mascarpone with just heavy cream.

Ingredients : Yields 1 cup Mascarpone cheese
Heavy cream 500ml
Fresh lemon juice 1 - 1.5 tbsp

Notes:
1. Do remember to keep a very low flame & stir continuously throughout the cooking.
2. Store the cheese in an air-tight container , keep refrigerated at all times & use within 5 days.
