Vegetable Paneer Pulav | Soft & Aromatic One Pot Rice Recipe

Veg Paneer Pulao is a simple and aromatic one-pot rice recipe made in a pressure cooker. Prepared with basmati rice, vegetables, paneer, cashews, dried prunes and whole spices, this pulao is perfect for lunch or dinner. Serve hot with boondi raita or salad.
Ingredients
Basmati rice 1 cup soaked 30 minutes
Oil 2 tbsp
Ghee 1 tbsp
Bay leaf 1
Big black cardamom 2
Cumin seeds 1 tsp
Cinnamon 1 small piece
Cloves 4
Whole black pepper 6 to 8
Onion 1 medium sliced
Ginger chilli paste 1 tsp
Red chilli powder half tsp
Turmeric powder quarter tsp
Tomatoes 3 medium chopped
Mixed vegetables 1 to 1 and quarter cup
Cashews 10 to 12
Paneer half cup lightly fried
Dried prunes 4
Salt 2 tsp
Water 2 and quarter cups
Coriander leaves for garnish
Heat oil and ghee in a pressure cooker.
Add bay leaf, big black cardamom, cumin seeds, cinnamon, cloves and black pepper.
Sauté till aromatic.
Add sliced onion and cook till light golden.
Add ginger chilli paste, red chilli powder and turmeric powder.
Cook for 1 minute.
Add chopped tomatoes and cook till soft and mushy.
Add mixed vegetables, cashews, dried prunes and fried paneer.
Add 1 tsp salt and sauté gently for 30 to 40 seconds.
Add soaked and drained basmati rice.
Mix gently without breaking grains.
Add 2¼ cups water and remaining 1 tsp salt.
Mix once.
Close the lid and cook on medium flame for 2 & 1/2 whistle.
Switch off the flame.
Let pressure release naturally.
Open lid, fluff gently and serve hot.
