Some enzymes present in some tropical fruits can break down protein. Pineapple has a digestive enzyme called bromelain, while papain comes from the papaya fruit.
This experiment investigates the properties of bromelain. Bromelain will break down the gelatin proteins into its amino acid components, hence preventing it from setting.
