Baking your bread at home is easier than you think. In this recipe, I demonstrate in detail how to bake the softest, fluffiest homemade bread shaped into what professional bakers call batards. These are the most used bread shaping method of most bakeries, and you get a crunchy end.
Recipe:
Wet Ingredients:
Combine in large Bowl
1 Cup Whole Milk
1/2 Cup Warm Water
1/2 Cup Brown Sugar
2 Tsps Instant Yeast
1 Egg
3 Tbsps Softened Butter (unsalted)
1 Tbsp Shortening
2 Tsps Salt
6 Cups All Purpose Flour
1. In a large bowl, add milk and warm water. Add sugar, yeast and egg and mix well.
2. Add butter, shortening and salt, and mix well with a wire whisk.
3. Add half the flour to the wet mixture and mix with a spoon or rubber spatula.
4. Add remaining flour and mix till a dough is formed.
5. Transfer to floured surface and knead for about 8 minutes or until dough becomes smooth and passes the window pane test.
6. Oil bowl with 1 TBSP of vegetable oil and place dough into bowl. Let rise for 1 Hour or until dough doubles in size.
7. Punch down dough and form into balls. You can shape into dinner rolls or batards (see video)
8. Place bartards on a greased baking sheet and allow to rise for 45 mins. After risen, you may brush batards with egg wash or milk.
9. Bake at 325 Degrees for 15 to 20 mins
