Ingredients
Dough:
450 g wheat flour
250 g cold butter
1 egg
1/2 tsp salt
1 tbsp vinegar (9%)
150 g cold water
Cream:
1 L milk
120-180 g sugar
3 eggs
70 g cornstarch
70 g butter
Preparation
Grate cold butter and mix gently with flour and salt.
Add egg, vinegar, and cold water. Form the dough quickly.
Divide into portions and chill for at least 1 hour.
Roll thin layers, prick with a fork, and bake at 200°C until golden.
Cook custard by combining eggs, sugar, cornstarch, and hot milk.
Cook until thick, then add butter and cool.
Assemble cake by layering pastry and cream.
Rest in the refrigerator overnight before slicing.
