Ingredients
4 boiled eggs
2 tbsp oil or butter
1 onion (finely chopped)
1 tomato (pureed)
1 tbsp ginger-garlic paste
1 green chili (chopped)
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp coriander powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves
Method
Heat oil in a pan and lightly fry the boiled eggs. Keep aside.
In the same pan, add onions and sauté until golden brown.
Add ginger-garlic paste and green chili. Cook well.
Add tomato puree and cook until oil separates.
Add all spices and salt. Mix well.
Add fried eggs and toss gently.
Cook for 3–4 minutes on low flame.
Garnish with fresh coriander and serve hot.
Serving Suggestions
Serve hot with butter roti, naan, paratha, or steamed rice.
