25 Forgotten Creole Dishes From New Orleans No One Makes At Home Anymore
In the 1960s, New Orleans kitchens were never really off. Pots stayed going, windows stayed fogged, and grandmas kept food moving so nobody ever came home to an empty table. These were not restaurant meals. They were survival suppers, built on thrift, routine, and the kind of memory that never needed a recipe card.
This video looks back at 25 Creole dishes once common in working neighborhoods of New Orleans. Red beans simmered all day for washday Monday. Maque Choux stretched a little bit of meat into a full meal. Crawfish, shrimp, and rice fed whole families when money was thin. These meals held people together through long shifts, hot summers, and paychecks that never quite reached far enough.
Most of these suppers were carried in a woman’s head, not in a cookbook. When those grandmothers were gone, the meals quietly went with them. What remains are fragments, stories, and the smell of something good still rising from a pot.
