The ultimate Meat Seasoning
Recipe for 2500g of seasoning
(50kcal/100g)
Ingredients:
5 cups Salt (400g)
15x twigs Rosemary (50g)
30x twigs Thyme (45g)
40x twigs Marjoram (80g)
20x twigs. Oregano (30g)
20x twigs. Parsley (80g)
40x twigs Lovage (100g)
15x Bay leaves (2g)
2x whole. Garlic (150g)
6 tsp Mustard powder (45g)
7x Chili, fresh (20g)
10 tbsp Black pepper (70g)
11 tsp Curry powder (60g)
20 tsp Paprika powder (120g)
Various other herbs can also be used to make this seasoning.
The quantities of the herbs don’t need to be taken too seriously :D
Preparation method:
Take all the fresh herbs and remove the leaves from the stems and put them in a bowl.
Give the bay leaves into a mixer / food processor and mix them.
Add the peeled garlic and mix until you have a smooth paste.
Add the mustard powder and mix again, put the mixture in a bowl.
Give the fresh chilis without the green part into the mixer and add some herbs and salt, mix until everything is well mixed and put it into the bowl with the already mixed ingredients.
Mix all the herbs with salt until all herbs and salt is processed.
Mix all the mixed ingredients with a spoon and let the mixture dry outside (smells very strong) for about two weeks.
You have to stir the salt mixture every day once until its evenly dry.
Once the mixture is dry, mix it again in stages together with the curry powder, paprika powder and black pepper corns.
Sieve all powdered ingredients through the sieve and mix everything well.
Fill the seasoning into airtight container, jars or bags (don’t use tin boxes, they will rust).
This salt can be used for various meats and meat dishes it also goes well with tofu, potatoes, root vegetables or dips.
Preparation time: 1h
Start to Finish: 2 weeks
The seasoning can be kept for at least one year in an airtight container.
Don’t keep the salt much longer, it will lose its taste after a year.
