Today we are making these adorable Matcha Cream "Tacos"! These are made with a super soft, chiffon-style green tea sponge cake, filled with a rich cream cheese whipped cream, and topped with fresh green grapes and mint. They are light, airy, and not too sweet—perfect for tea time!

Ingredients List

The Matcha Sponge Base:
•4 Eggs (Separated into Whites and Yolks)
•40g Corn Oil
•50g Milk (or Water)
•40g Low Gluten Flour (Cake Flour)
•8g Matcha Powder
• 50g Sugar (for the egg whites)
•A few drops of Lemon Juice
The Cream Cheese Filling:
•80g Cream Cheese (softened)
•20g Sugar
•200g Heavy Cream (Whipping Cream)
Garnish:
•Green Grapes (Shine Muscat works best!)
•Fresh Mint Leaves
Instructions:
1. Mix corn oil and milk until emulsified. Sift in flour
2. Whip egg whites with lemon juice and sugar until soft peaks form (meringue)
3.Fold the meringue into the green batter in three parts.
4. Pour into a lined square baking tin (approx 28cm) and smooth the top.
5. Bake at 150°C (300°F) for roughly 30 minutes.
6. Let cool, then use a circle cutter to cut out round shapes.
7. Whip the cream cheese, sugar, and heavy cream until stiff.
8.Pipe the cream into the center of the cake circles, fold gently like a taco, and top with grapes and mint.
