Easy Banana Pudding (from scratch)
Ingredients:
For the vanilla pudding:
16 oz vanilla plant milk (I used almond)
3/4 cup cornstarch
3/4 cup granulated sugar
2 cups plant based whipping cream
2 Tbs vanilla extract
2 Tbs plant-based butter
1 cup unsweetened, smooth
peanut butter
To assemble:
1 Box vegan vanilla wafers
4-5 ripen bananas (not to ripen, do you want them to have structure)
Vegan whipping cream
Directions:
To make the pudding: In a medium sized pot, mix (off the heat) plant milk with cornstarch, and sugar until well combined. Cook on medium high heat while stirring constantly to prevent clumping.
Cook for about 7 to 12 minutes, or until the milk has thickened and the mixture no longer tastes like uncooked cornstarch. Turn off the heat. Add vanilla extract and vegan whipping cream. Mix well to combine. Transfer to a container, cover with plastic wrap, really close to the surface of the pudding. Allow to cool for about 10 minutes before transferring into the refrigerator for at least six hours, preferably overnight.
Once pudding is really cold, mix with a stand or hand mixer to aerate and allow texture to become silky smooth. Add the peanut butter and continue to mix until well incorporated.
Save about five vanilla wafers, crush, and set aside.
Assemble right away by layering the pudding, followed by a layer of vanilla wafers, cover with freshly sliced banana, repeat until done with all ingredients. Garnish with the crushed vanilla wafers. Top with whipped cream when serving.
