Here's the recipe:
1½ tablespoons unsalted butter, plus more if needed
4 slices prosciutto (about 2 ounces), torn or chopped
1 shallot, finely chopped (or 2 cloves garlic, minced)
1 (16 to 20 oz) package refrigerated cheese tortellini
2 cups (10 ounces) frozen peas (no need to thaw)
1 cup low-sodium chicken broth (or vegetable broth)
1 cup heavy whipping cream (or half-and-half)
¼ teaspoon ground nutmeg
Salt and black pepper to taste
Zest and juice of ½ lemon ( ½ tablespoons juice)
Optional: red pepper flakes, lemon zest, or fresh chopped parsley or basil
INSTRUCTIONS:
1. Crisp the prosciutto
Heat a large skillet over medium heat with the oil or butter. Add prosciutto and cook 2–4 minutes until lightly crisp. Remove to a plate (leave the fat in the pan). Dispose of burnt prosciutto or butter.
2. Build the base
Add shallots or garlic to the skillet and cook over medium heat about 2-3 minutes or just until fragrant. Add more butter to pan if dry.
3. Cook the tortellini (one-pan magic ✨)
Add the tortellini and broth. Bring to a gentle simmer, cover, and cook according to package directions (usually 5–7 minutes), stirring once or twice, until tortellini are tender and most of the liquid is absorbed.
4. Make the lemon cream sauce
Stir in the heavy cream, peas, Parmesan and nutmeg. Simmer uncovered for 2–3 minutes, until peas are heated through and the sauce thickens slightly. Turn down heat slightly. Stir in lemon zest and juice.
5. Finish strong
Add more Parmesan if necessary and the crispy prosciutto back to the pan. Season generously with black pepper (prosciutto + Parm are salty enough).
6. Serve
Top with extra proscuitto and any optional add-ins you love (ie, red pepper flakes, chopped parsley or basil).
Easy Variations:
Lighter: Use milk or evaporated milk instead of cream
Extra fancy: Add a splash of white wine before the broth
Greens boost: Toss in baby spinach at the end
No prosciutto? Pancetta or bacon works great!
