Kaane fish or Lady fish is a pearl white fish that is mostly found in the backwaters of coastal Karnataka. Kudapura is famous for two dishes,One being the chicken ghee roast & the other is the Kaane Masala fry popularised by Shetty Lunch Home and then in Mangalore by Hotel Anupama. Kaane Masala fry is one of the exotic seafood delicacies which is regarded as a premium item in Kundapur, Mangalore,Maharastra. Though the kane Masala fry recipe of the Shetty Lunch Home is their trade secret, my version is quite close to the actual recipe. In this recipe, the marinated fish is cooked in a spicy, delicious tangy semi dry gravy or masala.

Step 1: Masala paste:
Ingredients:
10 Byadige red chillies soaked in hot water for 30 mins
¼ cup coriander seeds
½ tsp peppercorns
¾ tsp jeera
1 tsp chopped ginger
1.5 tsp chopped garlic
3 tsp chopped onion
1.5 tsp tamarind paste
¼ cup water for grinding
salt
Method:
Add all above ingredients to a mixie jar & grind to fine paste.
Step 2:Marination of KaneFish
Ingredients:
5-10 medium sized Kane(ladyfish)
Note: Remove the scales,slit in the side,remove the head ,wash & clean. Then immerse in water with salt,½ lemon squeezed,¼ tsp turmeric.Allow it to rest for atleast 20 mins to eliminate any bad smell.
After 20 mins,remove the fish.Discard the water.
Method:
Apply required amount of masala paste onto the kane fish & allow it to marinate for 30 mins.
Step 3: Kane Masala Fry preparation:
Ingredients:
4-5 tsp of Coconut oil(preferably) or any oil
1 tbsp garlic chopped(Note:1 tbsp=3 tsp)
1 tsp ginger chopped
1 tsp chopped green chillies
10-12 curry leaves
1 cup chopped onion(finely chopped)
6 tsp Masala paste(remaining after Marination)
6 Marinated kane fish(I have taken 6 kanes for remaining amount of the masala paste)
small piece of jaggery
salt to taste
3 tsp chopped coriander leaves
Method:
1.Add oil,then garlic,ginger,chillies,curry leaves, onion & saute.
2.Then add masala paste ,adjust salt,jaggery & cook till oil seperates from the masala.
3.Then add ½ cup of residual masala water(from the mixie jar) & cook.
4.Add the marinated fishes,cook on both the sides by flipping using 2 spatulas.Add coriander leaves.
