Fried Tacos and Taquitos, Guacamole & Pico de Gallo.
Shredded Pork (Carnitas)
Ingredients:
· 3 lb pork shoulder roast
· 2 tbsp garlic power
· 1 tbsp fine salt
· 1 tbsp ground black pepper
· 1-2 tbsp cooking oil (Optional: Can be used to coat roast so that
seasonings cling better)
Steps:
· In a roasting pan, rub thawed pork roast down with garlic powder, salt
and black pepper. Place on the middle rack in the oven at 300 degrees F
for 5-6 hours or until you can pull the meat apart with two forks.
· Once meat has been pulled apart, salt and pepper to taste.
Pico De Gallo
Ingredients:
· 2-3 Medium size tomatoes diced (I usually use firm Roma Tomatoes)
· 1/2 medium onion diced, (I prefer using red onion for it’s additional
color)
· 1 large tomatillo, diced
· ½ jalapeno pepper, seeded and finely minced (optional)
· 1/4 cup cilantro, chopped
· 2 tbsp lime juice,
· 2-3 cloves of garlic, minced
· ¼ cup green onion, diced
· Salt and pepper to taste
Steps:
· Combine ingredients into a bowl that can accommodate all the
ingredients. Mix together thoroughly. Salt and pepper to taste.
Guacamole
Ingredients:
· 2-3 avocados
· 1 tbsp cilantro chopped
· 1 tbsp green onion diced
· ½ lime (about 1 tbsp) juice
· 1 tbsp red onion chopped
· 1 tsp garlic minced
· 2 tbsp tomato diced
· 1 tsp jalapeno minced (seeds removed)
· Salt and pepper to taste
Steps:
· In a large enough bowl, scoop avocados from skin and mash with a fork.
I like to keep my guacamole a little chunky. However, mash according to
your desired texture.
· Add all other ingredients and mix thoroughly. Salt and pepper.
· (Optional: Instead of add all the separate ingredients, feel free to
just add about ¼ cup of the Pico De Gallo without the liquid to the
mashed avocado and salt and pepper to taste. You will achieve about the
same result. I often like to add more green onion and cilantro so I
sometimes add these ingredients separately.)
Prepping Tacos and Taquitos for frying:
Ingredients:
· Flour Tortillas
· Corn Tortillas
· Smaller corn tortillas for taquitos if desired
· Frying oil (I used grape seed oil in the video. Use an oil that can
take high heat)
(The number of tortillas will vary depending on how much meat is used in
either Taco or Taquito)
Steps:
· Pour frying oil into pan about ½ inch to 1 inch depth. Turn on burner
on medium to high temp.
· Place meat in the tortilla on one side, closer to the center of the
tortilla. Fold in half and place in frying pan.
· Using tongs, hold tortilla down for 1-2 minutes until tortilla holds a
taco shape and then flip over onto other side. Depending on your
burner, during this time you may need to turn your burner down or up.
Desired color of the taco should be a medium brown. You may need to flip
the taco over a couple of times for it to hold its shape.
· As for taquitos, place the meat near the center of the flat tortilla,
roll and place immediately in hot oil with the end side of the tortilla
down in the hot oil. Hold down with tongs for about 30-60 seconds so it
holds it shape. Then roll over to cook other sides of the taquito.
· Feel free to add more oil as you fry, since tacos/taquitos will absorb
the oil as you cook.
Additional ingredients for plating and serving:
· Hot Sauce
· Salsa
· Shredded lettuce
· Shredded Cheese
· Cotija Cheese (white crumbling cheese shown in video)
· Sour cream
· Mexican Crema
