Vendakkai (okra) mor kuzhambu is a tangy, comforting South Indian yogurt-based curry. Here’s a simple recipe:
Ingredients:
200g vendakkai (okra), chopped into small pieces
1 cup thick curd (yogurt), whisked
1/2 tsp turmeric powder
Salt to taste
1 tbsp oil
For grinding:
3 piece ginger
1 tsp cumin seeds
2-3 green chilies
1 tsp rice flour and toor dhal (optional, for thickness)
Tempering:
1 tsp mustard seeds
1 tsp urad dal (split black gram)
A pinch of hing (asafoetida)
Few curry leaves
2 dry red chilies
Method:
1. Heat oil in a pan, add mustard seeds, let them splutter. Add urad dal, dry red chilies, hing, and curry leaves. Fry till dal turns golden.
2. Add chopped vendakkai and turmeric, sauté till okra is cooked and slightly crisp. Set aside.
3. Grind cumin, green chilies, and soaked rice & toor dhal with little water to a smooth paste.
4. Add this paste to the cooked okra, add water (about 1 cup), and simmer for 5-7 minutes.
5. Lower the heat, add whisked curd, stir well, and just warm through—don’t boil after adding curd.
6. Adjust salt and serve with rice.
