Dear all - I wasn't too convinced when I saw the ratio of chilli powder and mango ginger ... just trust me and go with the recipe. Renu akka is my husband's cousin sister. She is brilliant in pickle making.
Recipe -
1. 400 gms of mango ginger, peeled and cut into small pieces
2. Heat oil in a kadai, add the mango ginger. When it is well cooked, cool and blend in a mixie to a coarse paste
3. Heat 3/4 sesame or ground nut oil in a kadal, add 1/4 cup mustard, handful few curry leaves and 7-8 red chillies
4. Add tamarind paste of 150 gms of tamarind (extracted to a thick paste with 1 cup water)
5. Let it come to a good boil. Add 1 tsp turmeric powder, 1 tsp fenugreek powder, 1 tbsp hing, 100 gms chilli powder, salt. Mix well and cook on low flame till raw smell of chilli powder is gone
6. Add the ground mango ginger, add 1/4 cup of more oil if needed. Cover and cook till oil separates
7. Add 150 gms of grated jaggery. Mix well
Can be stored for 4 months
