🥢 Kimchi Olive Pasta Recipe
Ingredients (2 servings)
Pasta – 200g (spaghetti, linguine, or your choice)
Kimchi – 1 cup, chopped (with some juice for extra flavor)
Olives – ½ cup, sliced (green or black, or a mix)
Olive oil – 2 tbsp
Garlic – 3 cloves, minced
Onion – 1 small, finely chopped (optional)
Soy sauce – 1 tbsp
Gochujang (Korean chili paste) – 1 tbsp (adjust to spice preference)
Pasta cooking water – ½ cup
Spring onions – 2 stalks, chopped (for garnish)
Sesame seeds – 1 tsp (optional)
Instructions
Cook the pasta
Bring salted water to a boil, cook pasta until al dente, and reserve ½ cup of the pasta water. Drain and set aside.
Prepare the sauce base
In a large pan, heat olive oil over medium heat.
Add garlic (and onion if using), sauté until fragrant.
Add kimchi & flavor
Stir in the chopped kimchi and cook for 2–3 minutes to release aroma.
Add gochujang, soy sauce, and a splash of kimchi juice for tanginess. Mix well.
Add olives & pasta water
Toss in sliced olives.
Pour in the pasta water and stir to create a slightly saucy base.
Combine pasta & sauce
Add the cooked pasta and toss well so the sauce coats every strand.
Garnish & serve
Top with chopped spring onions and sesame seeds.
Serve hot — spicy, tangy, and savory!
💡 Tips
For a creamy twist, add 2 tbsp of cream or cream cheese when mixing the pasta.
You can add cooked chicken, shrimp, or tofu for extra protein.
Black olives give a richer flavor, green olives add more brininess.
