Easy kombucha recipe:
Boil 3 gallons water
Add 3 cups sugar and 1 cup tea. I like to mix 1/2 black and 1/2 green but always organic ingredients. Let cool. Put COOLED in your brewer/dispenser. Place SCOBY on top of your sweet tea in the dispenser. Let sit for one week, more if necessary. Stir kombucha tea occasionally to ensure the SCOBY is in contact with all tea.
Add 1/4 juice to each 16 oz Grolsh bottle. Top with Kombucha tea from your dispenser, leaving 1" headroom at the top of the bottle. Let sit for 2 or 3 days in a dark place. Check daily by opening the bottle and seeing how much pressure has built up. If you get a lovely POP, your kombucha is ready and you must then put it in the refrigerator or the pressure of the fermentation will increase and possibly cause your bottle to explode. ENJOY!
***SCOBY should float after it's settled for a few days and will grow to fit the container and get thicker over time. You can peel off the older, upper layers and give to friends.
