Pullman pan 20 x 10 x 10 cm
400 grams bread flour
3 tablespoons sugar
1 teaspoon instant yeast
2 tablespoons milk powder
1 egg, lightly beaten
200 grams milk
1 teaspoon salt
50 grams unsalted butter, at room temperature
5 grams charcoal powder + 1/2 tablespoon milk
1. In a bowl of a stand mixer add bread flour, sugar, instant yeast, milk powder and mix. Pour in the egg and milk. Mix everything together until there isn't too much dry flour. Add salt.
2. Knead the dough in a stand mixer at medium speed for 8 minutes. Add the butter in 2 additions. Mix at low speed for 3 minutes. Scrape the sides of the bowl from time to time.
3. After mixing all the butter, knead at medium speed for 3 minutes. Do the windowpane test. Take a piece of dough and stretch it to form a thin membrane. If the dough does not break when stretched, the gluten is well-developed.
4. Remove about 250 grams of dough and set it aside. Leave about 500 grams in the bowl.
Mix charcoal powder with milk and add it to the dough in the stand mixer bowl. Mix at low speed for 3 minutes.
5. Place the black dough in a greased bowl and cover with plastic wrap. Do the same with the plain dough. Leave to rise in a warm place until doubled in size, about 1 hour.
6. Remove the black dough from the bowl and gently deflate it. Divide the dough into 2 equal portions and shape them into a ball.
7. Remove the plain dough from the bowl and gently deflate it. Shape into a ball. Cover the 3 pieces of dough and rest for 10 minutes.
8. Take one piece of black dough. If is sticky add a little bit of flour. Roll into about 15 cm x 30 cm.
Do the same with the plain dough.
9. Place the black dough on top of the plain dough. Roll dough from one end, so that it forms a roll. Pinch the seam to close.
10. Roll the other black dough out the same way as before. Place the roll of plain and black dough on one end. Roll it to form a roll. Pinch the seam and each end to close.
11. Place dough seam side down into a 20 x 10 x 10 cm greased loaf pan. Cover and leave to proof until it reaches 80% of the pan size.
12. Slide the lid on the pan. Bake in a preheated oven at 170°C for 30 minutes. Remove bread immediately from the pan. Transfer onto a wire rack to cool completely.

400g de farinha de trigo para pão (tipo1)
3 colheres de sopa de açúcar
1 colher de chá de fermento biológico seco instantâneo
2 colheres de sopa de leite em pó
1 ovo, levemente batido
200ml de leite
1 colher de chá de sal
50g de manteiga sem sal, em temperatura ambiente
5g de carvão ativado em pó + 1/2 colher de sopa de leite
