Here's my FULL "get it done" playlist!! • Get it all done!
Blueberry OR Apple Banana Bread:
2 ripe bananas
3 cups flour
1 can blueberry or apple pie filling
2 flax eggs
1 tsp baking soda
1 tsp baking powder
1 1/2 cup sugar
1 tsp cinnamon
1 tbsp vanilla extraxt
Mix well, bake at 350 for 1 hour or until complete baked through
**Sprinkle a touch of sugar on top for a little extra special texture!
Mushroom Gravy:
16 oz sliced mushrooms
1 can coconut milk
3 cups zucchini
1 onion
2 red bell peppers
*seasonings of choose! I did dill, garlic and a touch of chili powder
*cook down onions peppers and zucchini, add in mushrooms and cook with coconut milk
*add 2 tbsp of flour or corn starch to thicken
Easy Curry:
1 large sweet potato
1 onion
1 can coconut milk
1 cup zucchini
1 packet curry sauce or curry powder
garlic + any seasonings you'd like!
Simmer low and slow for about an hour!
How I make my veggie broth:
I save ALL my veggie scraps and store them in a ziplock in my freezer, that I reuse over and over! Once I have about a full gallon ziplock bag full of scraps I put them into a huge pot on my stove top and cover them generously in water. I bring to a boil, boil for about 20 minutes than simmer for about 2-3 hours. Strain off the veggie scraps, toss them and store your broth in recycled glass jars! You can freeze the broth for about 6 months or keep it in your fridge for about 7 days! It's great to add your liking of seasonings to too!! SO many great possibilities AND its completely FREE because you're saving your odds and ends!
