“Busy” doesn’t mean overwhelmed — it means there’s barakah in our time, love in our effort, and purpose in our every day.
In today’s vlog, I share a day from my real mom life: baking lunchbox muffins, dropping my son off in Toronto, passing by a Pakistani cloth shop and the beloved Rahat Bakery 🍰🧵, and ending our day at a packed but joyful dinner at Sumaq Restaurant.
Alhamdulillah for days like this – full, fast-paced, and full of blessings. May Allah count us in those who are always grateful no matter how hard our test is. Aameen
BLUEBERRY 🫐 MUFFINS :
INGREDIENTS
Preheat &375 F , baje for 15 minutes -12 muffins.
½ cup (113 g ) unsalted butter, room temperature
zest of 1 lemon
1 cup + 1 tablespoon (214 g) sugar
1 egg, room temperature
1 teaspoon vanilla
2 cups (256 g) all-purpose or cake flour
2 teaspoons baking powder
1½ teaspoon Diamond Crystal kosher salt, see notes above
2 cups fresh blueberries
½ cup milk or buttermilk
