Sourdough Turkish Pide (lamb & cheese)

For the dough...
2 cups flour
1/2 cup starter
100g water (just under 1/2 cup)
1/4 Greek yogurt
1 egg
pinch of salt
Combine water, starter, yogurt, egg and salt. Mix until yogurt is thoroughly incorporated, then add flour and bring together to form dough. Turn onto floured board and knead until smooth. If dough is too sticky add flour a small amount at a time until it no longer sticks to your hands. Flour and place in covered bowl for at least 6 hours.
Lamb filling
300 g (heavy 1/2lb) ground lamb
1T olive oil
1 onion
2 cloves garlic
2 tomatoes finely chopped
1T tomato puree
1/2 tsp allspice
1T cumin
2 tsp sumac
2T pomegranate molasses
salt & pepper to taste
sesame seeds
Cheese filling
1 cup ricotta
1/2 feta
1T olive oil
zest of 1 lemon
few sprigs mint
few springs thyme
salt & pepper to taste
