🧂Ingredients:
• 7 tablespoons unsalted butter, divided
• 1 tablespoon olive oil
• 1 cup finely diced yellow onion (about 1 medium onion)
• 1 ½ teaspoons minced garlic
• ¾ teaspoon smoked paprika (or regular paprika)
• ¾ teaspoon ground mustard
• ⅛ teaspoon ground cayenne pepper (optional for a kick)
• Salt and black pepper, to taste
• 6 tablespoons all-purpose flour
• 32 oz reduced-sodium chicken broth (or vegetable broth)
• 3 cups half-and-half (see note)
• 1 bay leaf (optional)
• 6 cups broccoli, chopped into bite-size pieces
• 2 cups shredded carrots
• 12 oz freshly shredded extra-sharp cheddar cheese (about 3 ¼ cups)
🥄 Instructions:
1. In a large pot or Dutch oven, heat 1 tbsp olive oil and 1 tbsp butter over medium heat.
2. Add diced onion and cook until softened, about 5 minutes.
3. Stir in garlic, paprika, ground mustard, cayenne, salt, and pepper. Cook 1 more minute.
4. Add the remaining 6 tbsp butter and let it melt.
5. Sprinkle in the flour and stir constantly for 1–2 minutes to make a roux.
6. Slowly whisk in the broth, making sure the mixture is smooth.
7. Stir in the half-and-half and bay leaf. Bring to a gentle simmer.
8. Add broccoli and carrots. Simmer for 15–20 minutes until vegetables are tender.
9. Reduce heat to low and gradually stir in the shredded cheddar until melted and creamy.
