This video runs over my process for a typical beer brewing. There seems to be a lot of dogma about what should and should not be done while brewing. I tend to just try things out and see what works. My process seems to work well!
Here are a couple recipes I've done with success. For a taller beer you may consider bumping up the malt extract another 1-2lb in either recipe.
Apple Smash v1 (no mashing):
5 Gallons Dark
5 lb dry malt extract, light brown
16 fl oz honey
2.2 liters apple cider (10lb bag of apples juiced)
Bittering .3 oz Cascade Hops; boil 60 minutes
Bittering .1 oz Hallertau Hops; boil 60 minutes
Finishing .1 oz Kent Goldings Hops; boil 15 minutes
Apple Smash v2 (mashing)
5 Gallons Dark
11lb of medium roast grains for mash
1lb Dark malt extract
1 cup dark roast grains (cracked, used in mash)
5 gallons of mash water
90 minutes of mash @ ~66c
16 fl oz honey
2.2 liters apple cider (10lb apples juiced)
Bittering .3 oz Cascade Hops; boil 60 minutes
Bittering .2 oz Hallertau Hops; boil 60 minutes
Finishing .3 oz Kent Goldings Hops; boil 15 minutes
