Ingredients:
1 cup Gram flour/Besan
4 green Bajji chillies
1 tspn chilli powder
1/4 tspn turmeric powder
1/4 tspn ajwain
Salt to taste
Water for batter mix
Oil to fry
Steps to cook:
1. Slit the green chillies lengthwise and cut off the tip. Optionally, you can remove the seeds if you prefer a milder flavor.
2. Choose a bowl with a shallow depth and wide mouth for mixing the ingredients.
3. Add all the ingredients to the bowl. To release the flavor and aroma, rub the ajwain before adding it.
4. Mix all the ingredients together, breaking up any lumps.
5. Gradually add water to the mixture, stirring continuously until the right consistency is achieved (as shown).
6. The batter consistency should be thick to ensure proper coating on the chilli.
7. Prepare the oil for frying, making sure it's deep enough to completely submerge the bajji.
8. Heat the oil and, if you're new to frying, test the temperature by sprinkling a small amount of batter to see if it rises to the surface.
9. Scoop the batter with the chilli, ensuring one side of the chilli is exposed to the oil (this is why a shallow bowl is used).
10. Fry the bajjis over low heat. Exposing one side of the chilli to the oil enhances the flavor and reduces the heat of the chilli.
11. Continue rolling them and fry until the bubbles decrease.
12. Remove the bajjis from the oil and let them cool for 5 minutes.
13. To achieve the crispiest bajjis, re-fry them in medium heat for 2-3 minutes.
