Soft sponge, creamy pudding and fresh currants come together in this easy homemade cake. This red currant cake is light, refreshing and perfectly sliceable. A lovely choice for dessert and for those who enjoy classic flavors.
🧾 Ingredients
For the sponge cake:
4 eggs
1 tbsp lemon juice
1 pinch of salt
120 g powdered sugar
1 tbsp vanilla flavoring
2 tbsp oil
100 g all-purpose flour
1 tsp baking powder
For the pudding layer:
800 ml milk
80 g fruit-flavored pudding powder
100–150 g sugar (to taste)
100 g butter or margarine
For the fruit layer:
mixed red and black currants (about 300–400 g)
For the jelly:
500 ml fruit syrup mixed with water
15 g gelatin
a little cold water for blooming
👩🍳 Instructions
Sponge
Beat eggs with lemon juice, salt and powdered sugar until fluffy. Mix in vanilla and oil. Fold in flour mixed with baking powder.
Bake in a lined 26 cm springform pan at 180 °C. Let cool completely.
Pudding layer
Cook a thick pudding from milk, pudding powder and sugar. Stir in butter while hot.
Wrap the cooled sponge tightly with foil, pour the hot pudding over it, smooth the top and chill until set.
Fruit layer
Sprinkle currants evenly over the chilled pudding.
Jelly
Bloom gelatin in cold water, gently warm it, then mix into the syrup. Carefully pour over the fruit and refrigerate until fully set.
💡 Tips
Always pour the pudding hot for stable layers.

The syrup should be lukewarm, not cold, when mixing with gelatin.
