SWEET FERMENTED RICE (酒酿, JIU NIANG)
1. First, soak the glutinous rice 1200g overnight. It's best to use round glutinous rice for a sweeter taste.
2. After soaking, spread it evenly on a steamer tray lined with cloth and steam for 30 minutes until it's soft and sticky. Be sure not to use a rice cooker, as it might affect the taste.
3. After steaming, transfer the rice to a clean pot and let it cool.
Then, gradually add 500 ml of water, mixing gently each time until it's well combined.
4. Now, it's time to add the Shanghai Yeast Balls 2g for that extra sweetness. Be mindful not to add too much, especially in the summer, as it might make it sour. Stir well.
5. Once mixed, flatten the rice mixture, create a small indentation in the middle, and cover it with plastic wrap.
6. Let it sit on the table for two days.
In hotter regions, you can place it in an air-conditioned room for two to three days or cover it with a damp towel to prevent sourness.
7. Store in a clean bottle or container and refrigerate.
