Ingredients:
For the sticky rice:
1 cup glutinous (sticky) rice
1 cup coconut milk
1/4 cup sugar
1/4 tsp salt
For serving:
1–2 ripe mangoes, peeled and sliced
2 tbsp coconut milk (optional, for drizzling)
1 tsp toasted sesame seeds or mung beans (optional)
Instructions:
Soak the rice:
Rinse the sticky rice until the water runs clear. Soak it in water for at least 1 to 2 hours
Cook the rice:
Drain the soaked rice and steam it (using a bamboo steamer or a cheesecloth-lined regular steamer) for about 20–25 minutes, until tender.
Make the coconut sauce:
While rice is steaming, heat 1 cup coconut milk in a saucepan on low heat. Add 1/4 cup sugar and 1/4 tsp salt. Stir until dissolved. Do not boil.
Mix the rice and sauce:
Once the rice is cooked, place it in a bowl and pour most of the coconut sauce over it (save a little for serving). Gently mix. Cover and let it sit for 10–15 minutes so the rice absorbs the flavors.
Prepare the mangoes:
Peel and slice ripe mangoes just before serving.
Assemble:
Serve a scoop of coconut sticky rice with mango slices. Drizzle with extra coconut milk and sprinkle with sesame seeds or mung beans if desired.
