Following a historic snow storm, I wanted to see if water alone could alter the flavor of a coffee I thought I understood. I brewed one coffee from JBC Coffee Roasters three different ways using three different Third Wave Water profiles. Same beans. Same grind size. Same brew method. Only the water chemistry changed.
Was I surprised by the results? Yes, very surprised.
