Ingredients
For Green Chutney-
1 cup coriander leaves
1/2 cup Mint leaves
1/2 inch ginger
4 cloves of garlic
2 green chilies
1 tsp lemon juice
1/2 tsp cumin powder
1/2 tsp chat masala
1/2 tsp sugar
1/4 tsp salt
1/2 tsp black salt
For Tamarind Chutney-
50 gm tamarind
1 tbs oil
1/4 tsp asafoetida
1/4 tsp cumin seeds
1/2 cup jaggery
1/2 cup sugar
salt
1/2 tsp black salt
1/2 tsp chat masala
1/2 tsp roasted cumin powder
1 tsp red chilli powder
1/2 tsp melon seeds (*optional)
Method of
Green Chutney-
In a blending jar add coriander leaves, mint leaves, ginger, garlic, green chillies, lemon juice, cumin powder, chat masala, salt, sugar & black salt. Grind into a smooth paste (*add little water if required).
Green chutney is ready.
Tamarind Chutney-
Soak tamarind in hot water for 30 mins
Transfer the soaked tamarind in a pan & cook for 3-4 mins on medium flame. Switch off the flame after 4 mins & let it cool down completely.
Transfer in a grinding jar & grind into a smooth paste.
Now strain the tamarind paste to get smooth pulp. Keep aside.
Heat oil in a pan. Add asafoetida & cumin seeds. Fry for few seconds. Add prepared tamarind pulp & cook for 1 minute on medium flame. Add jaggery & sugar. Mix & let it melt.
Add salt, black salt, chat masala, roasted cumin powder & red chilli powder. Mix everything well & let it cook for 1 minute.
Add melon seeds(*optional) & mix.
Tamarind chutney is ready.
