Lentil soup is one of my all-time favorite comfort foods. Served with a salad, crusty bread or corn muffins, and a crisp green salad, it can really hit the spot. In addition, it is a terrific high protein and fiber edition to a whole food plant based diet.
This one is prepared in the Instant Pot and the recipe comes from Jill Nussinow’s Vegan Under Pressure, one of my favorite cookbooks.
There are additional seasonings that you can try, but it is terrific at its simple best.
