HUEVOS RANCHEROS
Ingredients for 4 servings
1 15oz (425g) can black beans, rinsed and drained
1 cup (236ml) salsa picante
1/2 teaspoon ground cumin
4 crisp corn tortillas
4 fried eggs
For garnish: Queso Fresco, diced tomato, and chopped cilantro (coriander)

Stir together the beans, salsa picante, and cumin in a small saucepan set over medium heat. Cook just until the ingredients are warmed through -- 1 or 2 minutes. Remove the pan from the heat. Mash the mixture with a potato masher.

Spread the bean mixture over the 4 crispy tortillas, and place them, if you wish, in a warm oven. Fry the eggs to your liking, and then place the eggs on top of the tortillas.

Garnish each serving with a dusting of Questo Fresco, a spoonful of diced tomato, and a shower of chopped cilantro. Serve hot or warm.
