How to cook fresh caught mackerel (Boat Cooking with Boatnotes #1)

In our boat cooking videos we show you what and how our sailing family cook on our boat Ponyo. This episode is about how we caught a 4kg dorado (mackerel) and how we prepared and cooked it the Japanese way!
We had quite a choppy sea and filming and cooking at the same time wasn't easy so apologies for quality and lack of footage. Rike actually felt seasick cooking and filming and had to take breaks every 5 minutes to go outside get some fresh air haha.
You only need some key ingredients that will last you a long time and that you can use for many Japanese dishes. Rike loves to cook Japanese, Chinese and Korean so we always have these ingredients on board:
Ginger
Garlic
Soy Sauce
Mirin
Sake
Also useful and good in this dish:
Radish
Spring Onion (Scallion)
Lime or Lemon
So and here you go with the easy-peasy recipe:
Fillet the mackerel
Chop ginger and garlic
Mix soy sauce, mirin and sake to taste
Mix ginger, garlic, sauce and fish and let it marinate for as long as you want
Before stir-frying add some potato starch (or any starch for that matter) to keep the juice in
Sprinkle with radish, spring onions and slices of lime and serve with rice, enjoy!!
Oh and this recipe works with many kinds of fish with white meat, it's super fast and very easy and you can prepare it even in choppy seas.
